Goan Beef Curry

Ingredients
- 1.5 lb beef chuck or sirloin, cut into 1-inch cubes
- 1 can (13.5 oz) coconut milk (full-fat)
- 3 tbsp Goan curry paste or red curry paste
- 1 medium onion, sliced
- 1 tbsp tomato paste
- 1 whole lime (juiced)
- ¼ cup cilantro or parsley, chopped (optional garnish)

Heat oil in a large skillet over medium-high. Add onion, cook until softened and edges brown, ~4 minutes.

Push onion to the side. Add curry paste, stir for 30 seconds until fragrant, then add beef cubes.

Sear beef 2–3 minutes without stirring until edges brown. Stir, then cook another 2 minutes.

Add tomato paste, stir for 1 minute, then pour in coconut milk. Bring to a simmer.

Simmer uncovered 8–10 minutes until beef is tender and sauce thickens slightly.

Squeeze lime juice over the top. Taste and adjust salt. Serve over rice with cilantro.
