Ingredients
- 1.5 lbs shrimp and/or firm white fish (cod, halibut), cut into bite-sized pieces
- 2 medium tomatoes, diced
- 4 clove garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1 whole jalapeño, seeded and minced
- 3 tbsp olive oil
- 1 to taste salt and black pepper

Heat olive oil in a large skillet over medium-high heat until shimmering, ~90 seconds.

Add garlic, ginger, and jalapeño; stir constantly until fragrant, about 90 seconds.

Add diced tomatoes and cook, stirring occasionally, until they begin to break down, ~3 minutes.

Add seafood pieces and season with salt and pepper. Cook without stirring for 2 minutes.

Stir gently and cook until shrimp are opaque and fish flakes easily, 2–3 minutes more.

Taste and adjust salt and pepper. Serve hot in a shared platter with injera or rice.
