Ingredients
- 1.5 lb winter melon, peeled and cubed
- ¾ lb shrimp, peeled and deveined
- ¼ lb diced ham (or Chinese sausage, sliced thin)
- 6 cups chicken or shrimp stock
- 3 slices ginger, peeled and sliced thin
- 0.3 oz dried mushrooms (shiitake or porcini), rinsed
- 2 tbsp Shaoxing wine (or dry sherry)
- 2 stalks green onions, sliced thin
Instructions

Bring stock to a boil in a large pot over high heat. Add ginger slices and dried mushrooms.

Add winter melon cubes and ham. Return to a boil, then reduce heat and simmer 8 minutes.

Pour in Shaoxing wine. Add shrimp and stir gently until they turn pink and opaque, about 3 minutes.

Taste and season with salt and white pepper. Ladle into bowls.

Garnish each bowl with sliced green onions. Serve hot.
