Winter Melon Soup

Ingredients
- 500 g winter melon
- 250 g ground pork
- 3 stalks green onions
- 1 liter chicken broth
- 1 tbsp soy sauce
- 1 tsp salt

Peel the 500g winter melon, remove seeds, and slice into 2cm cubes. Thinly slice 2 of the 3 green onions, keeping the third for garnish.

In a bowl, mix the 250g ground pork, 1 tbsp soy sauce, and half the sliced green onions. Roll into small meatballs, about 2cm each.

Bring the 1 liter chicken broth to a boil in a pot. Add the winter melon cubes and cook over medium heat until they turn translucent, about 10 minutes.

Drop in the meatballs gently. Simmer until they float and are cooked through, about 5 minutes. Season with 1 tsp salt, adjusting to taste.

Ladle into bowls and garnish with the remaining sliced green onion. Serve hot.
