Ingredients
- ½ lb ground beef
- 1 large egg
- ¼ cup breadcrumbs
- ½ cup orzo pasta
- 1 medium carrot
- 6 cups chicken broth
- 2 tbsp fresh parsley
- ½ tsp salt

In a bowl, mix the 0.5 lb ground beef, 1 egg, 0.25 cup breadcrumbs, and 0.25 tsp salt until just combined. Roll into 1-inch meatballs.

In a large pot, bring the 6 cups chicken broth to a boil over high heat. Add the meatballs and reduce heat to medium-low; simmer gently until meatballs are cooked through, about 10 minutes.
