Ingredients

  • 1.5 lb waxy potatoes (yukon gold or fingerling), unpeeled
  • ½ cup vegetable broth
  • 3 tbsp white vinegar
  • 3 tbsp butter
  • ½ medium red onion, thinly sliced
  • ½ cup tempeh bacon, crumbled (or smoked paprika-seasoned chickpeas)
  • 2 tbsp fresh dill, chopped
  • 1 tbsp grainy mustard

Instructions

    Cut potatoes into 1-inch cubes (leave skins on). Boil in salted water until fork-tender, about 10 minutes.
