Warm German Potato Salad

Ingredients

  • 1.5 lb waxy potatoes (about 1.5 lb)
  • ⅓ cup white vinegar
  • ⅓ cup vegetable broth
  • 1 medium yellow onion, thinly sliced
  • 2 tbsp whole grain mustard
  • 3 tbsp fresh parsley or dill, chopped

Instructions

    Cut waxy potatoes into 1/4-inch-thick rounds. Boil in salted water until fork-tender, about 10 minutes.

    While potatoes cook, whisk vinegar, broth, and mustard in a bowl until smooth.

    Drain potatoes and return to the warm pot off heat. Add sliced onion.

    Pour vinegar dressing over warm potatoes and onions. Toss gently until coated.

    Let sit 3 minutes so flavors meld. Taste and add salt and pepper as needed.
