Ingredients
- 1.5 lb waxy potatoes (about 1.5 lb)
- ⅓ cup white vinegar
- ⅓ cup vegetable broth
- 1 medium yellow onion, thinly sliced
- 2 tbsp whole grain mustard
- 3 tbsp fresh parsley or dill, chopped
