Warm Goat Cheese Toast Salad

Ingredients

  • 4 cups mixed greens (arugula, baby spinach, or frisée)
  • 4 oz goat cheese, softened
  • ½ loaf baguette, sliced 1/2-inch thick
  • 1 tbsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 1 small shallot, minced

Instructions

    Whisk Dijon, red wine vinegar, minced shallot, 3 tbsp olive oil, salt, and pepper in a bowl.

    Arrange baguette slices on a sheet pan and toast under the broiler until light gold, 2–3 minutes.

    Spread goat cheese evenly on each warm toast. Broil 1–2 minutes until edges bubble and top just softens.

    Toss greens with half the vinaigrette. Divide between two plates.
