Ingredients
- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup sugar
- ½ cup milk
- ¼ cup vegetable oil
- 1 large egg
- ¾ cup walnuts

Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, 0.5 tsp salt, and 0.5 cup sugar.

In a separate bowl, whisk the 1 egg, 0.5 cup milk, and 0.25 cup oil until combined.

Pour the wet ingredients into the dry and stir with a spatula until just moistened. The batter should be lumpy; do not overmix.

Fold in the 0.75 cup walnuts, reserving a few for topping if desired.

Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle reserved walnuts on top.
