Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup sugar
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • ¾ cup walnuts

Instructions

  1. 1

Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

  2. 2

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, 0.5 tsp salt, and 0.5 cup sugar.

  3. 3

In a separate bowl, whisk the 1 egg, 0.5 cup milk, and 0.25 cup oil until combined.

  4. 4

Pour the wet ingredients into the dry and stir with a spatula until just moistened. The batter should be lumpy; do not overmix.

  5. 5

Fold in the 0.75 cup walnuts, reserving a few for topping if desired.

  6. 6

Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle reserved walnuts on top.

  7. 7

Bake for 18-20 minutes, until the tops are golden and a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
