Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1.25 cups milk
  • 2 large eggs
  • 4 tablespoons butter
  • 1 cup strawberries
  • 1 cup heavy cream

Instructions

    In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. In another bowl, beat the 2 eggs with 1.25 cups milk and 4 tbsp melted butter until combined.

    Pour the wet ingredients into the dry and stir until just mixed; a few lumps are fine. Let the batter rest while you preheat your waffle iron.

    Cook the batter in the waffle iron according to its instructions until golden and crisp, about 4-5 minutes. Keep warm on a plate while you make the cream.

    In a chilled bowl, beat the 1 cup heavy cream with an electric mixer on high until soft peaks form, about 2-3 minutes. Add a spoonful of sugar if you like it sweeter.

    Slice the 1 cup strawberries and 1 banana (if you have one) into bite-size pieces. Place a waffle on each plate and top with fruit and a generous dollop of whipped cream.
