Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1.25 cups milk
  • 2 large eggs
  • 4 tablespoons butter
  • 1 cup heavy cream
  • ¼ cup powdered sugar

Instructions

  1. 1

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. In another bowl, beat the 2 eggs with 1.25 cups milk and 4 tbsp melted butter.

  2. 2

Pour the wet ingredients into the dry and stir until just combined; the batter should be slightly lumpy. Do not overmix.

  3. 3

Preheat your waffle iron and lightly grease it. Pour about 1/2 cup of batter onto the hot iron and cook until golden and crisp, about 4-5 minutes. Repeat with remaining batter.

  4. 4

In a chilled bowl, whip the 1 cup heavy cream with 2 tbsp of the powdered sugar until soft peaks form, about 2-3 minutes.

  5. 5

Top each warm waffle with a generous dollop of whipped cream, dust with the remaining powdered sugar, and scatter fresh raspberries over the top. Serve immediately.
