Ingredients

  • 1 cup rice
  • 1 cup black-eyed peas
  • 4 cups water
  • ½ teaspoon baking soda
  • 1 teaspoon salt

Instructions

    Rinse the 1 cup rice and 1 cup black-eyed peas separately under cold water. Soak the peas in water for at least 2 hours or overnight if possible.

    In a large pot, combine the soaked peas and 4 cups water. Bring to a boil over high heat, then reduce to medium-low and simmer until the peas are just tender, about 20 minutes.

    Add the 1 cup rice, 0.5 teaspoon baking soda, and 1 teaspoon salt to the pot. Stir gently to combine.

    Cover and cook over low heat until the rice and peas are fully cooked and the liquid is absorbed, about 20-25 minutes. The mixture should be tender and slightly creamy.
