Ingredients
- 3 cups cooked rice
- ½ pound beef sirloin
- ½ cup frozen peas
- 1 medium potato
- ½ cup green beans
- 1 medium onion
- 2 tablespoons soy sauce
- 3 tablespoons vegetable oil
Instructions
- 1
Dice the 1 medium onion and 1 medium potato into small cubes. Trim and cut the 0.5 cup green beans into 1-inch pieces. Slice the 0.5 pound beef sirloin into thin strips.
- 2
Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef and stir-fry until browned, about 3 minutes. Remove beef and set aside.
- 3
In the same skillet, add the remaining 1 tbsp oil. Add the potato and onion, cook over medium-high until potato starts to soften, about 5 minutes.
- 4
Add the green beans and 0.5 cup frozen peas. Stir-fry for 2 minutes until vegetables are tender-crisp.
- 5
Add the 3 cups cooked rice and 2 tbsp soy sauce. Toss everything together, breaking up clumps, until rice is heated through, about 3 minutes.
- 6
Return the beef to the skillet. Stir-fry for 1 minute until everything is well combined and hot. Serve immediately.
- 7
Optional: add a pinch of black pepper or a drizzle of sesame oil before serving if you have them.
