Ingredients
- 1.5 lb pork belly
- 6 eggs
- 2 cups coconut water
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 3 shallots
- 1 tsp black pepper
- 1 tbsp vegetable oil

Cut pork belly into 1-inch cubes. Blanch in boiling water for 3 minutes, then rinse and drain.

Hard-boil eggs for 9 minutes, cool, peel, and set aside.

In a large pot, heat oil over medium. Add sliced shallots and cook until fragrant, about 2 minutes.

Add pork and brown sugar. Stir to coat, then cook until pork is lightly caramelized, about 5 minutes.

Pour in coconut water and fish sauce. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.
