Ingredients

  • 1.5 lb pork belly
  • 6 eggs
  • 2 cups coconut water
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 3 shallots
  • 1 tsp black pepper
  • 1 tbsp vegetable oil

Instructions

    Cut pork belly into 1-inch cubes. Blanch in boiling water for 3 minutes, then rinse and drain.

    Hard-boil eggs for 9 minutes, cool, peel, and set aside.

    In a large pot, heat oil over medium. Add sliced shallots and cook until fragrant, about 2 minutes.

    Add pork and brown sugar. Stir to coat, then cook until pork is lightly caramelized, about 5 minutes.

    Pour in coconut water and fish sauce. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.

    Add eggs and black pepper. Simmer uncovered for 15 more minutes, until sauce thickens and pork is tender.

    Serve hot with steamed rice and extra black pepper if desired.
