  • 8 sheets rice paper wrappers
  • 8 oz thin beef steak (e.g., sirloin)
  • 4 oz vermicelli noodles
  • 2 cups mixed salad greens (lettuce, carrot, bell pepper)
  • ½ cup fresh herbs (cilantro, mint)
  • 1 tbsp sesame seeds

Instructions

    Cook the 4 oz vermicelli noodles in boiling water until tender, about 4 minutes. Drain, rinse with cold water, and set aside.

    Season the 8 oz beef with salt and pepper. Heat a skillet over high heat and cook the beef until browned and cooked through, about 3 minutes per side. Let rest, then slice thinly.

    Dip one rice paper wrapper in warm water for 5 seconds, then lay it on a plate. Place a few greens, herbs, noodles, and beef slices in the center. Fold the sides over and roll tightly. Repeat with remaining wrappers.
