Viennese Goulash

Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 medium carrot
- 1 medium parsnip
- 2 cups tomato sauce
- 2 tsp paprika

In a bowl, mix the 1 lb ground beef with 1 tsp paprika and a pinch of salt. Roll into 1-inch meatballs.

Heat 1 tbsp oil in a large pot over medium-high. Add the meatballs and brown on all sides, about 5 minutes. Remove and set aside.

In the same pot, add the 1 sliced onion, 2 chopped carrots, and 1 chopped parsnip. Cook until softened, about 5 minutes.

Stir in the 2 cups tomato sauce, 1 tsp paprika, and 1 cup water. Bring to a simmer.

Return the meatballs to the pot. Simmer until meatballs are cooked through and sauce thickens, about 10 minutes. Season with salt and pepper. Garnish with chopped parsley if desired.
