Vegetarian Dan Dan Noodles

Ingredients
- 3 tbsp sesame paste (or natural peanut butter)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 8 oz Chinese egg noodles or ramen
- 2 tbsp chili oil (Sichuan or Vietnamese), plus more for serving
- ¼ cup roasted peanuts, crushed
- 2 stalks green onion, sliced thin

Mince garlic and ginger. Slice green onions. Crush peanuts coarsely.

Bring a large pot of salted water to boil. Add noodles and cook per package direction until al dente, stirring once.

While noodles cook, whisk sesame paste, soy sauce, vinegar, garlic, ginger, and 3 tbsp hot water in a large bowl until smooth.

Drain noodles well. Reserve 1/4 cup noodle water.

Add warm noodle water to sauce 1 tbsp at a time, stirring, until sauce coats a spoon but stays pourable.

Toss hot noodles with sauce until every strand is glossy and coated.

Divide noodles between bowls. Drizzle chili oil over top.

Garnish with crushed peanuts and green onion. Serve hot with extra chili oil on the side.
