Ingredients

  • 8 oz egg noodles or fresh Chinese noodles
  • 6 oz scallions, white and green parts separated, sliced thin
  • ⅓ cup neutral oil (vegetable or peanut)
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • ½ tsp sugar
  • 1 pinch salt and white pepper to taste

Instructions

    Boil salted water in a large pot. Add noodles and cook until al dente, ~4 minutes. Drain and set aside.

    Heat neutral oil in a small saucepan over medium-high. Add white scallion pieces and fry until fragrant and oil turns golden, ~2 minutes.

    Pour hot scallion oil into a large bowl. Stir in soy sauce, sesame oil, and sugar until combined.

    Add warm noodles to the oil mixture. Toss until evenly coated. Season with salt and white pepper to taste.
