Ingredients
- 4 slices ciabatta or sourdough bread
- 2 tablespoons olive oil
- 1 medium, sliced tomato
- ½ small, thinly sliced red onion
- 1 cup, shredded lettuce
- 4 slices provolone or mozzarella cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper

Brush one side of each bread slice with olive oil. Place oiled side down on a cutting board.

Layer cheese, tomato slices, onion, and lettuce on two slices. Season with salt and pepper.

Top with remaining bread slices, oiled side up. Press gently.

Heat a grill pan or skillet over medium heat. Place sandwiches in pan, pressing with a spatula.
