Ingredients

  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 2 medium tomato
  • 4 stalks green onions
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • ½ teaspoon salt

    Cut the 1 red bell pepper and 1 yellow bell pepper into 1-inch chunks. Cut the 2 tomatoes into wedges. Trim the 4 green onions into 2-inch pieces.

    In a large bowl, combine the pepper chunks, tomato wedges, and green onion pieces. Add the 2 tbsp olive oil, 1 tsp ground cumin, 1/2 tsp ground turmeric, and 1/2 tsp salt. Toss until all vegetables are coated.

    Thread the vegetables onto skewers, alternating colors and types. Leave a small gap between pieces so they cook evenly.

    Preheat a grill or broiler to medium-high. Place the skewers on the grill or a baking sheet under the broiler.

    Cook for 10-12 minutes, turning occasionally, until the vegetables are charred at the edges and tender when pierced with a fork.
