Ingredients

  • 2 cups cooked rice
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 8 oz mushrooms, sliced
  • 3 tbsp soy sauce

Instructions

    Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the 2 cups cauliflower and 2 cups broccoli florets; stir-fry until they start to brown, about 4 minutes.

    Add the 1 sliced bell pepper and 8 oz sliced mushrooms. Cook, stirring often, until the mushrooms release their liquid and the vegetables are tender-crisp, about 5 minutes.

    Stir in the 3 tbsp soy sauce and 2 cups cooked rice. Toss everything together until the rice is heated through and coated with sauce, about 2 minutes.
