Ingredients
- 2 cups cooked rice
- 2 cups cauliflower florets
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 8 oz mushrooms, sliced
- 3 tbsp soy sauce

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the 2 cups cauliflower and 2 cups broccoli florets; stir-fry until they start to brown, about 4 minutes.

Add the 1 sliced bell pepper and 8 oz sliced mushrooms. Cook, stirring often, until the mushrooms release their liquid and the vegetables are tender-crisp, about 5 minutes.
