Ingredients

  • 4 cups leafy greens (e.g., spinach or kale), chopped
  • 2 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 tablespoons vegetable oil
  • 2 cups water or broth

Instructions

    Heat the 2 tbsp vegetable oil in a large pot over medium heat. Add the 1 chopped onion and 1 chopped bell pepper, and cook until soft, about 5 minutes.

    Add the 2 chopped tomatoes and cook until they break down and become saucy, about 5 minutes. Stir occasionally.

    Pour in the 2 cups water or broth and bring to a simmer. Let it cook for 5 minutes so the flavors meld.
