Ingredients
- 1.5 lb flank steak
- 1 can (15 oz) black beans
- 1 cup white rice
- 1 large onion
- 4 cloves garlic
- ½ cup sour orange juice
- 2 ripe plantains
- 1 large avocado

Boil the 1.5 lb flank steak in salted water until tender, about 1 hour. Shred the meat and set aside.

In a large skillet, heat 2 tbsp oil over medium-high. Add the shredded beef and cook until crispy and browned, about 8 minutes.

Add 1 sliced onion and 4 minced garlic cloves to the beef. Cook until onion is soft, about 3 minutes.

Pour in 0.5 cup sour orange juice (or mix 0.25 cup orange juice with 0.25 cup lime juice). Cook until liquid evaporates, about 2 minutes.

Meanwhile, cook 1 cup rice with 2 cups water until fluffy, about 20 minutes. Stir in the drained black beans and heat through.

Peel and slice 2 ripe plantains. Fry in 2 tbsp oil until golden and caramelized, about 3 minutes per side.

Mash 1 avocado with salt and lime juice to make guacamole. Serve beef over rice and beans, topped with guacamole, diced tomatoes, and extra onions.

Garnish with chopped cilantro if desired.
