Ingredients
- 1 cup sushi rice
- 1.25 cups water
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- 4 pieces fresh sea urchin (uni)
- 1 sheet nori

Rinse sushi rice under cold water until water runs clear. Cook with 1.25 cups water in a rice cooker or pot.

While rice cooks, mix rice vinegar, sugar, and salt in a small bowl until dissolved.

When rice is done, transfer to a bowl. Fold in vinegar mixture while fanning rice to cool. Let rest until room temperature.

Cut nori sheet into 1-inch wide strips. Set aside.

Wet your hands with water. Shape about 2 tablespoons of rice into a small oval mound.

Place a piece of uni on top of the rice, pressing gently to adhere.

Wrap a nori strip around the middle of the nigiri, overlapping ends. Serve immediately.

Optional: brush with soy sauce or add a dab of wasabi if you have them.
