Udon Stir-Fry

Ingredients
- 2 packages (7 oz each) udon noodles
- 8 oz squid rings
- 1 medium, sliced red bell pepper
- 2 cups broccoli florets
- 3 stalks, sliced green onions
- 2 large eggs
- 3 tbsp soy sauce
- 2 tbsp vegetable oil

Cook the 2 packages udon noodles according to package directions, then drain and set aside.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the 8 oz squid rings and stir-fry until just opaque, about 2 minutes. Remove and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 1 sliced red bell pepper and 2 cups broccoli florets; stir-fry until crisp-tender, about 4 minutes.

Push vegetables to one side. Crack the 2 eggs into the empty side and scramble until just set, about 1 minute.

Add the cooked udon noodles, the squid, and 3 tbsp soy sauce. Toss everything together and cook until heated through, about 2 minutes.
