Ingredients

  • 1.5 cups all-purpose flour
  • 1.25 cups sugar
  • ¾ cup cocoa powder, unsweetened
  • 3 whole eggs
  • 2 cups heavy cream
  • 6 oz white chocolate, chopped
  • 6 oz dark chocolate, chopped

Instructions

    Preheat oven to 350°F. Grease a 9-inch round cake pan.

    Whisk flour, sugar, and cocoa powder in a bowl until combined.

    Add eggs and 0.5 cup water. Stir until smooth, about 1 minute.

    Pour batter into pan. Bake until a toothpick comes out clean, 25–30 minutes.

    Remove from oven and let cool 15 minutes, then turn out onto a wire rack.

    Heat 1 cup cream until steaming. Pour over white chocolate; let sit 1 minute, then stir until smooth.

    Heat remaining 1 cup cream until steaming. Pour over dark chocolate; let sit 1 minute, then stir until smooth.

    Chill white chocolate mixture 15 minutes until spreadable but not set.

    Slice cooled cake horizontally into two layers using a serrated knife.

    Spread white chocolate mousse on the bottom layer; top with second layer.

    Pour dark chocolate ganache over top, letting it drip down the sides. Chill before serving.
