Ingredients

  • 3 cups all-purpose flour
  • 2.25 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • 2 tablespoons olive oil
  • ½ cup sesame seeds
  • 2 tablespoons poppy seeds

    In a large bowl, mix 3 cups flour, 2.25 tsp yeast, 1 tsp salt, and 1 tbsp sugar. Add 1 cup warm water and 2 tbsp olive oil; stir until a shaggy dough forms.

    Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise in a warm spot for 1 hour, until doubled in size.

    Punch down the dough and divide into 8 equal pieces. Roll each piece into a 12-inch rope, then join the ends to form a ring, pinching to seal.

    Preheat oven to 400°F (200°C). Mix 0.5 cup sesame seeds and 2 tbsp poppy seeds on a plate. Brush each ring with water and press both sides into the seed mixture.

    Place rings on a baking sheet lined with parchment. Bake for 15-18 minutes, until golden brown and hollow-sounding when tapped. Cool on a rack for 5 minutes before serving.
