Ingredients
- 1 lb lamb shoulder, cut into 1.5-inch cubes
- ¾ cup bulgur
- 2 whole red bell peppers, halved lengthwise
- 3 whole tomatoes, halved
- 1 whole yellow onion, sliced into thick rings
- 2 whole pita bread
- ½ cup fresh parsley, coarsely chopped
- 2 tbsp sumac or lemon juice

Bring 1.5 cups salted water to a boil. Stir in bulgur, remove from heat, cover, and let sit 12 minutes.

Thread lamb cubes onto two metal skewers, alternating with onion rings. Season generously with salt and pepper.

Heat a large cast-iron skillet over medium-high until very hot, about 2 minutes. Sear lamb skewers 3 minutes per side until edges char.

Push lamb to one side. Add peppers and tomatoes cut-side down to the skillet. Sear 2 minutes until charred.

Fluff bulgur with a fork. Divide between two plates. Arrange lamb, peppers, and tomatoes on top.

Sprinkle parsley and sumac over everything. Warm pita in the skillet 30 seconds per side. Serve alongside.
