Turkish Lamb Kebab

Ingredients
- 1.5 lb lamb shoulder, cut into 1.5-inch cubes
- 1 large red onion, cut into 1-inch chunks
- 1 whole lemon, halved
- 3 tbsp olive oil
- 1 tsp sumac (or extra lemon juice)
- ½ tsp whole cumin seeds
- ¾ cup Greek yogurt (for serving)
Instructions

Thread lamb and onion chunks alternately onto 4 metal or soaked wooden skewers, beginning and ending with lamb.

In a small bowl, whisk together oil, juice from half the lemon, sumac, cumin seeds, salt, and pepper until combined.

Brush skewers generously with the oil mixture on all sides, rubbing it in to coat completely.

Heat a large cast iron or heavy skillet over medium-high until it smokes lightly, about 2 minutes.

Sear skewers 3-4 minutes per side without moving, until lamb is deeply charred and onion edges blacken.

Serve hot with yogurt, fresh parsley or mint, warm pita, and a squeeze of remaining lemon half.
