Turkish Köfte with Yogurt Sauce

Ingredients

  • 1.25 lb ground beef
  • ½ medium onion, finely minced
  • ⅓ cup bread crumbs
  • ¼ cup parsley, chopped
  • 2 tbsp mint, chopped
  • 1.5 tsp cumin
  • 1 tsp paprika
  • ½ tsp red pepper flakes
  • 1 large egg
  • 1 can (15 oz) canned tomato sauce
  • ¾ cup plain yogurt (full-fat)
  • 1 pinch salt and pepper to taste

Instructions

    Mix beef, onion, bread crumbs, parsley, mint, cumin, paprika, red pepper flakes, egg, and pinch each of salt and pepper in a bowl.

    Roll mixture into 12–16 meatballs about 1.5 inches wide, placing each on a plate.

    Heat 2 tbsp olive oil in a large skillet over medium-high heat until it shimmers, ~90 seconds.

    Working in batches, sear meatballs without moving them until golden-brown on one side, ~3 minutes.

    Roll meatballs to sear the opposite side until mahogany brown, another 2–3 minutes.

    Pour tomato sauce around the meatballs. Add 0.5 cup water and stir gently to combine.

    Reduce heat to medium-low, cover, and simmer for 12–15 minutes until sauce thickens.

    Taste sauce and season with salt and pepper. Remove from heat.

    Dollop yogurt over the top and drizzle with a little olive oil. Serve warm.
