Ingredients

  • 3 cups all-purpose flour
  • 2.25 teaspoons instant yeast
  • 1.5 teaspoons salt
  • 1 teaspoon sugar
  • 1.25 cups warm water
  • 2 tablespoons olive oil

Instructions

  1. 1

In a large bowl, whisk together the 3 cups flour, 2.25 tsp instant yeast, 1.5 tsp salt, and 1 tsp sugar.

  2. 2

Add the 1.25 cups warm water and 1 tbsp olive oil. Stir with a wooden spoon until a shaggy dough forms.

  3. 3

Turn the dough onto a floured surface and knead for 8 minutes until smooth and elastic, about 8 minutes.

  4. 4

Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot until doubled, about 1 hour.

  5. 5

Preheat the oven to 475°F (245°C) with a baking sheet or pizza stone inside.

  6. 6

Punch down the dough and divide into 4 equal pieces. Roll each piece into an oval about 1/4-inch thick.

  7. 7

Place the ovals on the hot baking sheet. Brush each with the remaining 1 tbsp olive oil and bake until puffed and golden, about 8-10 minutes.

  8. 8

Serve warm, optionally brushed with melted butter and sprinkled with herbs.
