Ingredients
- 4 large flour tortillas
- 2 cans (5 oz each) canned tuna, drained
- ½ cup mayonnaise
- ½ cup pitted black olives, sliced
- ¼ cup red onion, finely chopped
- 2 cups romaine lettuce, shredded
- 1 tbsp lemon juice
- 1 pinch salt and pepper
Instructions
- 1
In a medium bowl, combine the 2 cans drained tuna, 0.5 cup mayonnaise, 0.5 cup sliced olives, 0.25 cup chopped red onion, and 1 tbsp lemon juice. Mix well until creamy; season with salt and pepper to taste.
- 2
Warm the 4 tortillas in a dry skillet over medium heat for about 30 seconds per side, until soft and pliable, or microwave them for 20 seconds.
- 3
Lay each tortilla flat and place 0.5 cup shredded lettuce down the center, leaving a border at the edges.
- 4
Divide the tuna mixture evenly among the tortillas, spooning about 0.5 cup onto each over the lettuce.
- 5
Fold in the sides of each tortilla, then roll tightly from the bottom to enclose the filling. Slice in half and serve immediately.
- 6
If you like extra flavor, add a dash of hot sauce or a sprinkle of paprika to the tuna mix before rolling.
