Ingredients
- 1.5 lb yellow potatoes
- 1 can (5 oz) tuna (canned, drained)
- ½ cup mayonnaise
- 2 tbsp lime juice
- 2 tbsp aji amarillo paste
- 1 large hard-boiled egg

Boil the 1.5 lb potatoes in salted water until fork-tender, about 15-20 minutes. Drain, peel, and mash while still warm.

Mix the mashed potatoes with 2 tbsp aji amarillo paste, 1 tbsp lime juice, and salt to taste. Press half the mixture into a serving dish or individual molds.

In a bowl, combine the drained tuna, 1/2 cup mayonnaise, and remaining 1 tbsp lime juice. Spread this filling over the potato layer.

Top with the remaining potato mixture, smoothing the surface. Chill for 10 minutes if time allows.
