Ingredients

  • 1.5 lb yellow potatoes
  • 1 can (5 oz) tuna (canned, drained)
  • ½ cup mayonnaise
  • 2 tbsp lime juice
  • 2 tbsp aji amarillo paste
  • 1 large hard-boiled egg

Instructions

    Boil the 1.5 lb potatoes in salted water until fork-tender, about 15-20 minutes. Drain, peel, and mash while still warm.

    Mix the mashed potatoes with 2 tbsp aji amarillo paste, 1 tbsp lime juice, and salt to taste. Press half the mixture into a serving dish or individual molds.

    In a bowl, combine the drained tuna, 1/2 cup mayonnaise, and remaining 1 tbsp lime juice. Spread this filling over the potato layer.

    Top with the remaining potato mixture, smoothing the surface. Chill for 10 minutes if time allows.

    Garnish with sliced hard-boiled egg, tomato, red onion, and shredded carrot. Serve cold or at room temperature.
