Ingredients
- 8 oz tagliatelle pasta
- 8 oz mixed mushrooms
- 2 tbsp butter
- 1 tbsp truffle oil
- 1 oz Parmesan cheese
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 8 oz tagliatelle and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.

While pasta cooks, slice the 8 oz mushrooms. Melt the 2 tbsp butter in a large skillet over medium-high heat. Add mushrooms and cook until golden and browned, about 5-7 minutes.

Add the drained pasta to the skillet with the mushrooms. Drizzle with the 1 tbsp truffle oil and toss to combine, adding a splash of reserved pasta water if needed to loosen the sauce.

Season with the 1 tsp salt (or to taste). Serve immediately, topped with shaved Parmesan cheese.
