Ingredients

  • 1.5 lb lamb shoulder, cubed
  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 2 tbsp ginger, minced
  • 1 can tomatoes, crushed
  • ½ cup yogurt
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1.5 tsp garam masala
  • 1 tsp red chili powder
  • 3 tbsp vegetable oil
  • 1.5 cup water
  • 1 tsp salt
  • ½ cup fresh coriander, chopped

Instructions

    Heat oil in a large pot and toast cumin seeds until fragrant.

    Add diced onions and sauté until golden brown, about 5 minutes.

    Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.

    Add cubed lamb and brown on all sides, approximately 5-7 minutes.

    Add coriander powder, turmeric, garam masala, and red chili powder; stir well.

    Add crushed tomatoes and yogurt, mixing thoroughly.

    Pour in water and bring to a simmer, then reduce heat and cover.
