Ingredients
- 1 cup (about 20 cloves) garlic cloves, peeled
- ½ cup fresh lemon juice
- 1 cup neutral oil (vegetable or light olive)
- 1 tsp salt
- 2 tbsp ice water

Add garlic and salt to a food processor. Pulse until garlic is finely minced and resembles wet sand.

With the processor running, slowly drizzle in lemon juice. Process until the mixture turns creamy and pale.

Very slowly drizzle oil in a thin stream while the processor runs. Stop to scrape the bowl if needed.

If the mixture looks too thick or breaks, add ice water 1 tablespoon at a time while processing.

Process until the toum is fluffy, white, and holds stiff peaks. Transfer to a serving bowl.
