Ingredients
- 12 oz tortellini
- 1 cup heavy cream
- 1 cup diced ham
- ½ cup grated parmesan
- 2 tbsp butter
- 2 tbsp fresh parsley
Instructions
- 1
Cook the 12 oz tortellini in salted boiling water until al dente, about 3-4 minutes or as package directs. Reserve 1/2 cup pasta water, then drain.
- 2
In a large skillet, melt the 2 tbsp butter over medium heat. Add the 1 cup diced ham and cook until lightly browned, about 3 minutes.
- 3
Pour in the 1 cup heavy cream and bring to a gentle simmer. Stir in the 1/2 cup grated parmesan and cook until the sauce thickens slightly, about 2-3 minutes, stirring constantly.
- 4
Add the cooked tortellini to the skillet and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
- 5
Season with salt and pepper to taste, then sprinkle with the 2 tbsp chopped parsley before serving.
