Ingredients
- 4 whole bolillo or crusty roll
- 2 cups cooked shredded beef or chicken
- 2 medium tomato
- 1 medium onion
- 3 tbsp mayonnaise
- 1 cup refried beans
- ½ tsp salt
- ¼ tsp black pepper

Slice the 4 rolls in half horizontally. Spread 1 tbsp mayonnaise on the cut side of each top half.

Spread 1/4 cup refried beans on the cut side of each bottom half.

Slice the 2 tomatoes and 1 onion into thin rounds. Season with 1/2 tsp salt and 1/4 tsp black pepper.

Divide the 2 cups shredded meat evenly among the bottom halves, piling it on top of the beans.

Layer the tomato and onion slices over the meat on each sandwich.

Close each sandwich with the top half. Press gently to compact.

Heat a large skillet or griddle over medium. Toast the sandwiches for 2-3 minutes per side, until the bread is golden and crisp and the filling is warm.
