Ingredients
- 4 cups dashi stock
- 8 oz pork belly or shoulder, thinly sliced
- 1 cup daikon radish, peeled and sliced
- 1 cup bamboo shoots (canned), sliced
- 7 oz firm tofu, cubed
- 3 tbsp miso paste

In a large pot, bring 4 cups dashi stock to a boil over medium-high heat. Add 8 oz sliced pork and cook until it changes color, about 3 minutes.

Add 1 cup daikon and 1 cup bamboo shoots. Reduce heat to medium-low and simmer until daikon is tender, about 10 minutes.

Add 7 oz cubed tofu and 3 tbsp miso paste. Stir gently until miso dissolves, then simmer 2 minutes until heated through. Serve hot.
