Ingredients
- 2 tbsp olive oil
- 1 large, sliced onion
- 4 cups, chopped cabbage
- 28 oz canned diced tomatoes
- 1 tsp ground cumin
- ½ cup plain yogurt
- ¼ cup, chopped fresh parsley
- 1 tsp salt

Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 sliced onion and cook until soft and golden, about 8 minutes.

Stir in 4 cups chopped cabbage and 1 tsp ground cumin. Cook for 5 minutes, until cabbage begins to wilt.

Add 28 oz canned diced tomatoes and 1 tsp salt. Bring to a simmer, then reduce heat to low.

Cover and simmer for 25–30 minutes, until cabbage is tender and flavors meld, stirring occasionally.

Remove from heat. Stir in 0.5 cup plain yogurt until creamy, then top with 0.25 cup chopped parsley.
