- 1 medium onion
- 2 cloves garlic
- 1.5 lb cherry tomatoes
- ½ cup kalamata olives
- 1 tsp dried oregano
- 1 cup shredded mozzarella
- ¼ cup fresh basil

Preheat oven to 400°F. Grease a 9x13 inch baking dish with 1 tbsp olive oil.

Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add 1 sliced onion and cook until soft and golden, about 8 minutes.

Add 2 minced garlic cloves and 1 tsp dried oregano; cook for 1 minute until fragrant.

Transfer onion mixture to the baking dish. Add 1.5 lb cherry tomatoes and 0.5 cup pitted olives; toss to combine.
