Ingredients

  • 2 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1.5 lb cherry tomatoes
  • ½ cup kalamata olives
  • 1 tsp dried oregano
  • 1 cup shredded mozzarella
  • ¼ cup fresh basil

    Preheat oven to 400°F. Grease a 9x13 inch baking dish with 1 tbsp olive oil.

    Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add 1 sliced onion and cook until soft and golden, about 8 minutes.

    Add 2 minced garlic cloves and 1 tsp dried oregano; cook for 1 minute until fragrant.

    Transfer onion mixture to the baking dish. Add 1.5 lb cherry tomatoes and 0.5 cup pitted olives; toss to combine.

    Sprinkle 1 cup shredded mozzarella evenly over the top. Bake until tomatoes are bursting and cheese is bubbly and golden, about 20-25 minutes.

    Let rest for 5 minutes, then scatter 0.25 cup fresh basil leaves over the top before serving.
