Ingredients
- 1 loaf baguette
- 4 medium tomatoes
- ½ cup fresh basil
- 2 cloves garlic
- 3 tablespoons olive oil
- ½ cup shredded mozzarella cheese

Slice the 1 baguette into 1/2-inch thick slices and arrange on a baking sheet. Toast in a 400°F oven until golden and crisp, about 5-7 minutes.

While bread toasts, dice the 4 tomatoes and chop the 1/2 cup basil. Mince the 2 garlic cloves and mix with the tomatoes, basil, and 2 tablespoons of the olive oil in a bowl.

Rub the toasted bread slices with the remaining 1 garlic clove, then brush with the remaining 1 tablespoon olive oil.

Top each slice with the tomato mixture, sprinkle with the 1/2 cup mozzarella and a pinch of red pepper flakes if desired. Return to the oven for 2-3 minutes until cheese melts.
