Ingredients
- 1 block (about 14 oz) silken tofu
- 2 cups water
- ½ cup brown sugar
- 1 inch piece, sliced ginger
- 1 tbsp tapioca starch

In a small saucepan, combine 2 cups water, 1/2 cup brown sugar, and 1 inch sliced ginger. Bring to a boil over medium-high, stirring until sugar dissolves, about 3 minutes.

Reduce heat to low and simmer the syrup for 10 minutes to infuse ginger flavor. Remove from heat and discard ginger slices.

In a small bowl, mix 1 tbsp tapioca starch with 2 tbsp cold water to make a slurry. Whisk into the warm syrup until slightly thickened, about 1 minute.

Gently spoon 1 block of silken tofu into serving bowls, breaking it into large, soft chunks with a spoon.

Pour the warm syrup over the tofu, letting it pool around the pieces. Serve immediately, warm or chilled.
