Ingredients
- 1 lb white fish fillets (e.g., sea bass or snapper)
- ½ cup lime juice
- 1 medium red onion
- 1 tbsp aji amarillo paste
- ¼ cup cilantro
- ½ tsp salt
- 2 cups ice

Slice the 1 lb fish fillets thinly against the grain into 1/4-inch pieces. Place them on a plate and refrigerate while you prepare the sauce.

In a bowl, combine the 1/2 cup lime juice, 1 tbsp aji amarillo paste, and 1/2 tsp salt. Stir until the paste dissolves.

Thinly slice the 1 red onion into half-moons. Rinse under cold water and pat dry to reduce sharpness.

Arrange the fish slices on a serving platter over the 2 cups ice. Tuck the onion slices among the fish.

Pour the lime mixture evenly over the fish and onions. Let it sit for 2-3 minutes until the fish turns opaque at the edges.
