Thumbprint Jam Cookies

Ingredients
- ½ cup butter, softened
- ¼ cup granulated sugar
- 1 whole egg yolk
- ½ tsp vanilla extract
- 1.25 cup all-purpose flour
- ⅓ cup jam (any flavor)

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Beat butter and sugar in a bowl until pale and fluffy, ~2 minutes.

Add egg yolk and vanilla, stir until combined.

Fold in flour until no streaks remain; dough should hold together.

Roll dough into 24 balls (walnut-sized), place on sheet 2 inches apart.

Press your thumb into center of each ball, creating a shallow well.

Spoon 1/2 tsp jam into each well. Bake 12 minutes until edges pale golden.

Cool on sheet 5 minutes, then transfer to a wire rack to cool completely.
