Ingredients
- 1.5 lbs white fish fillets (sea bass, cod, or halibut)
- 1 cup fish stock or chicken broth
- 1 whole lime (juiced + sliced)
- 1 tsp Thai chilies or red chile flakes
- 4 cloves garlic cloves, minced
- 1 tbsp fish sauce

Pour broth into a deep skillet. Add minced garlic, chili, fish sauce, and lime juice. Bring to a simmer over medium-high heat.

Pat fish fillets dry with paper towels. Season with salt and pepper on both sides.

Slide fillets into the simmering broth. Lay lime slices on top. Cover and steam until fish is opaque and flakes easily, ~8–10 minutes.
