Ingredients

  • 1.5 lbs white fish fillets (sea bass, cod, or halibut)
  • 1 cup fish stock or chicken broth
  • 1 whole lime (juiced + sliced)
  • 1 tsp Thai chilies or red chile flakes
  • 4 cloves garlic cloves, minced
  • 1 tbsp fish sauce

Instructions

  1. 1

Pour broth into a deep skillet. Add minced garlic, chili, fish sauce, and lime juice. Bring to a simmer over medium-high heat.

  2. 2

Pat fish fillets dry with paper towels. Season with salt and pepper on both sides.

  3. 3

Slide fillets into the simmering broth. Lay lime slices on top. Cover and steam until fish is opaque and flakes easily, ~8–10 minutes.

  4. 4

Transfer fish to serving bowls. Ladle hot broth over each fillet and serve immediately.
