Ingredients
- 2 lb pork spare ribs, cut into 2-inch pieces
- 8 cups chicken broth
- 3 whole lemongrass stalks, trimmed and halved
- 2 inch galangal root, sliced thin
- 2 tbsp fish sauce
- ¼ cup fresh cilantro, roughly chopped
- 1 whole lime (halved)

Bring a large pot of water to boil. Add pork ribs and boil 5 minutes, then drain and rinse under cold water until water runs clear.

Pour broth into a large pot over medium-high heat. Add blanched ribs, lemongrass, and galangal. Bring to a boil, then reduce to medium-low.

Simmer uncovered for 30 minutes until ribs are tender and meat pulls from bone easily.

Stir in fish sauce. Taste and adjust salt or fish sauce as needed.

Ladle soup into bowls. Scatter cilantro over top and squeeze lime juice into each bowl.
