Ingredients

  • 1 lb pork tenderloin
  • 3 tbsp vegetable oil
  • 1 medium red onion
  • 1 cup pineapple
  • ½ cup roasted peanuts
  • ½ cup green beans

Instructions

    Slice the 1 lb pork tenderloin into thin strips. Season with salt and pepper. Heat 2 tbsp vegetable oil in a large skillet over medium-high heat until shimmering.

    Add the pork in a single layer (work in batches if needed) and fry until golden and crispy, about 5-7 minutes per side. Transfer to a plate lined with paper towels.

    In a large bowl, combine the sliced red onion, diced pineapple, roasted peanuts, and trimmed green beans. Add the crispy pork.

    Whisk together the remaining 1 tbsp vegetable oil, juice of 1 lime, 1 tbsp fish sauce, and 1 tsp sugar. Pour over the salad and toss well.
