Ingredients
- 3 cups cooked rice
- 2 tablespoons Thai red curry paste
- 1 cup frozen peas and carrots
- 1 cup green beans
- 1 medium onion
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- ½ teaspoon salt

Heat 2 tbsp vegetable oil in a large skillet over medium heat. Add 1 sliced onion and cook until soft and translucent, about 5 minutes.

Add 2 tbsp Thai red curry paste and stir for 1 minute until fragrant.

Add 1 cup green beans and 1 cup frozen peas and carrots. Cook, stirring, for 3-4 minutes until vegetables are tender-crisp.

Add 3 cups cooked rice, 1 tbsp soy sauce, and 0.5 tsp salt. Stir-fry everything together for 3-5 minutes until rice is hot and well coated.
