Ingredients
- 1.5 lb pork spare ribs or st. louis ribs, thinly sliced between the bones
- 2 tbsp brown sugar
- 1.5 tbsp smoked paprika
- 1 tbsp chili powder
- ½ tbsp garlic powder
- 1 whole lime (halved, for finishing)

Pat ribs dry with paper towels. Mix brown sugar, smoked paprika, chili powder, garlic powder, salt, and pepper in a small bowl.

Rub the spice mixture all over the ribs, coating both sides generously.

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Sear ribs in batches without moving until edges char and meat is cooked through, 2–3 minutes per side.

Transfer to a platter. Squeeze lime over the top and serve immediately.
